We are making a conscious change to eat more plant based meals and we started our journey finding new and interesting ways to prepare meals on Minimalist Baker's blog. This is such a great way to serve something green for Easter brunch.

Douse your asparagus with olive oil, lemon juice, sea salt and cracked pepper.

Baked eggs are a perfect weekend recipe, especially on a chilly day.
Turn your oven to 350 degrees.
Take a small oven safe dish and place a teaspoon of butter in the bottom.
Line the edges of the dish with some finely sliced prosciutto or your favorite charcuterie.
Add other fresh ingredients to the bottom of the dish, garlic, shallots, spinach anything you have around.
