#EssentialRecipe => Croque Madame

Have you ever basted an egg? Basting is my cooking method of choice for breakfast.

Method:

Get a pan up to medium heat with a thin layer of avocado oil on the bottom.
Crack an egg into the pan and cover with a lid.

Add a little water (or my favourite, the juice from your feta cheese) and keep covered.
In a nutshell this is a sunny side up egg with a steamed top. You will learn to nail the timing depending on how runny you like your eggs.

Croque Madame Method:

Lightly toast a quarter baguette or dip the baguette in egg wash and pan fry like french toast (better in my opinion).

Traditional toppings on a Croque Madame are ham and comté cheese, but feel free to get creative.

Spinach, prosciutto, and avocado are good options.

Layer the ingredients and heat slightly with the broiler in your oven or in a salamander.

Top with your egg and a healthy dose of Jonny Hetherington EssentialsBeet Hot Sauce.

Voila! Essential croque madame.
