It’s Spot Prawn Season! A beautiful thing happens every May in Vancouver: the delectably sweet and delicious Spot Prawn season begins. It only lasts 6-8 weeks, so seafood lovers on the west coast start tying on their bibs in April in anticipation. We even have our own Spot Prawn Festival! There are so many ways to enjoy Spot Prawns, but I find this simple recipe is one of the best.

Ingredients:

-1 lb of spot prawns

-Snap peas

-Butter

-Garlic

-Shallots

-White wine

-Fresh parsley

-Coconut milk

-Sea salt and black pepper to taste

Tacos are a license to mix and match amazing ingredients.

I like to start with a protein like fish, chicken or beef and add a vegetable, a fruit and a complimentary cheese.

Here’s a great example:
Lightly fry 1 filet of halibut in butter with sea salt and cracked pepper.

Julienne a raw peeled beet and a fresh mango and place over mashed avocado on a slightly steamed tortilla.

Crumble on some feta cheese and add a healthy squirt of Peach Habanero Hot Sauce.

#EssentialRecipe => Lemon Thyme Chicken Breast

This is hands down my favorite way to serve a chicken breast for sharing at a party or enjoying on my own.

Cover a chicken breast with plastic wrap and smash with the bottom of a cast iron pan until the fatest part of the breast is the same thickness as the thinest part.

This will help you cook the entire breast evenly.

Season with sea salt and cracked pepper.
