The simple flavors in life are often the best. Try and beat this mouth watering breakfast of runny yolks on pear and goat cheese and a few leaves of baby spinach.
It all starts with the right bread. We have a bakery close by that sells ancient grain loaves, our favourite being the quinoa. I get the loaves unsliced as pre sliced bread is often too think and over takes the other ingredients. A perfect soft boiled egg is 5 min for large eggs or 4.5min for medium eggs. Shock them with cold water and peel.
Slather your toasts with goat cheese and layer on some thinly slices pear and baby spinach leaves. Add some Jonny Hetherington Essentials Peach Hot Sauce and then most importantly, once you slice that egg open and the yokey goodness starts to flow, sprinkle on some sea salt and freshly cracked pepper.
Voila! Soft boiled eggs on pear toasts.
