We are making a conscious change to eat more plant based meals and we started our journey finding new and interesting ways to prepare meals on Minimalist Baker's blog. We adapted a bit her Fluffy Chickpea Scramble recipe and served it with our Fig, Goat Cheese, balsamic salad (We will start exploring non dairy cheese replacement very soon).

Chickpea Scramble

Ingredients:

-1 3/4 cup (1 15-ounce, 425 g can) cooked chickpeas

#EssentialRecipe => Soft Boiled Eggs on Pear Toasts

The simple flavors in life are often the best. Try and beat this mouth watering breakfast of runny yolks on pear and goat cheese and a few leaves of baby spinach.

It all starts with the right bread. We have a bakery close by that sells ancient grain loaves, our favourite being the quinoa. I get the loaves unsliced as pre sliced bread is often too think and over takes the other ingredients. A perfect soft boiled egg is 5 min for large eggs or 4.5min...


#EssentialRecipe => Prosciutto Baked Eggs

Baked eggs are a perfect weekend recipe, especially on a chilly day.

Turn your oven to 350 degrees.

Take a small oven safe dish and place a teaspoon of butter in the bottom.
Line the edges of the dish with some finely sliced prosciutto or your favorite charcuterie.

Add other fresh ingredients to the bottom of the dish, garlic, shallots, spinach anything you have around.

Crack a couple of eggs and top with cheese.

Bake for 15 min turning every 3 min a quarter turn or until desired firmness of eggs...
